  6. 12 ea Reduced fat vanilla wafers

  7. 3 pk (8-oz.) Philadelphia fat

  8. -free cream cheese -- softened

  9. 3/4 c Sugar

  10. 1 t Vanilla

  11. 3 ea Eggs

  12. 1 c Assorted cut-up fruit or -reduced calorie cherry pie

  13. -filling

  14. Place wafers, flat side down, on bottom of each of 12

  15. paper-lined muffin cups.

  16. Beat cream cheese, sugar and vanilla with electric

  17. mixer on medium speed until well blended. Add eggs;

  18. mix just until blended. DO NOT OVERBEAT AFTER ADDING

  19. EGGS.

  20. Pour over wafers, filling each cup.

  21. 325 degrees F. for 30 minutes. Cool before

  22. removing from pan. Refrigerate several hours or overnight. Top with fruit just before serving. 12

  23. servings. Variations:

  24. 1 Tbsp. fresh lemon juice and 3/4 tsp.

  25. grated lemon peel into batter.

  26. 3/4 cup canned pumpkin,

  27. 3/4 tsp. ground

  28. cinnamon and dash EACH ground cloves and nutmeg in

  29. with cream cheese. Omit fruit.

  30. Cherry: Omit fruit. Top with 1 can (20 oz.) reduced

  31. calories cherry pie filling before serving.

  32. Quick Crust: Substitute 1 (9 oz.) ready-to-use graham

  33. cracker crumb crust (extra serving size) for crumbs.

  34. Makes 10 servings. (Adds 6g fat per serving.)

  35. Honey Crunch: Omit sugar. Mix 1/2 cup honey in with

  36. cream cheese. Omit fruit. Top with 3/4 cup lowfat

  37. granola ceereal; drizzle with 1 Tbsp. honey before
