  1. 1 1/2 - 2 pounds breaded fish fillets, breaded pork cutlets, or breaded chicken cutlets

  2. Sauce:

  3. 1 tablespoon minced scallions

  4. 1/2 tablespoon minced fresh ginger

  5. 1/2 tablespoon minced fresh garlic

  6. 1 cup chicken broth

  7. 1 teaspoon ground cayenne pepper

  8. 1 tablespoon white wine

  9. 2 tablespoons soy sauce

  10. pinch salt

  11. 1 tablespoon sesame oil

  12. 1 tablespoon corn starch dissolved in cup cold water

  13. 2 or 3 tablespoons vegetable oil

  14. Heat the oil in a fry pan or wok until it is smoking. Add scallions, ginger, and garlic, and stir fry for about 5 seconds. Add the chicken broth, cayenne pepper, wine, soy sauce, salt, sesame oil, the cornstarch mixture. Heat and stir the mixture slowly until the sauce thickens and then remove it from the heat.

  15. Serve the sauce poured over hot fillets or cutlets.
