  8. 2 lb Black beans

  9. 1/2 c Sunflower oil

  10. 1/2 lb Bacon

  11. 1/2 lb Diced ham

  12. 8 ea Chopped onions

  13. 7 ea Minced cloves garlic

  14. 7 ea Stalks chopped celery

  15. -w/leaves

  16. 3 c Uncooked brown rice

  17. 1/2 ts Cayenne

  18. 1 tb Vegtable season salt

  19. 4 ts Ground cumin

  20. 1/4 c White wine

  21. 1 c Sherry

  22. 6 qt Chicken broth OR 3 bouillon

  23. -cubes and 6 qt of water

  24. Wash black beans, cover with water and allow to soak

  25. overnight; rinse; drain; set aside. Pour oil into large soup

  26. pot. Add bacon, ham, onion, garlic and celery. Cook at high

  27. simmmer until vegetables are soft, about 30 minutes. Add beans,

  28. rice, seasonings, and broth to soup pot. Bring to boil; reduce

  29. heat, cover and simmer 2 1/2-3 hours. Let soup cool; put

  30. through a blender a little at a time until smooth.Return to

  31. soup pot; reheat on low about 45 minutes, adding wine

  32. andsherry. Ladle into bowls. - - - - - - - - - - - - - - - - - -
