  1. 2 onions, chopped

  2. 30 ml/2 tbsp chopped fresh coriander (cilantro)

  3. 15ml/1 tbsp green masala paste

  4. 15 ml/I tbsp chopped fresh mint

  5. 3 green chilies, chopped

  6. 1 green (bell) pepper, chopped

  7. 30ml/2 tbsp grated (shredded) coconut

  8. 45 ml/3 tbsp ghee

  9. 2 lb prawns (shrimp), peeled

  10. salt and pepper

  1. Method :

  2. Puree the onions, coriander, masala paste, mint, chilies, pepper and coconut to a paste in a blender or food processor.

  3. Heat the ghee and fry the paste for about 5 minutes. Add the prawns and fry for a further 5 minutes, stirring well.

  4. Season with salt and pepper. Serve hot with rice.
