  1. 1 cup warm water

  2. 110-115 1 Tbs active dry yeast

  3. 3-3 1/2 cups whole wheat flour

  4. 1 tsp olive oil

  5. 1 onion chopped

  6. 36 small black olive s pitted and chopped

  7. 1 tsp salt

  8. 1/2- 1 tsp dried Rosemary or Sage

  1. Mix water and yeast -proof 5-10 min Add 1 cup flour and beat well -3 min. Heat oil and cook onions -5 min. Add to dough. Stir in olives , salt and rosemary. Turn out onto floured counter and knead. Coat bowl with oil. Cover 1 hour -80-85 degrees Punch and knead, shape into round loaf. Place on baking sheet. Cover and let rise 40 min. Preheat oven to 375. Dust top with flour. Bake 40 min.
