  5. 1 tb Vegetable oil

  6. 1 sm Garlic clove; minced

  7. 2 tb Scallion; finely chopped

  8. 1/2 c Chicken broth

  9. 2 tb Red wine vinegar

  10. 1 ts Ginger; finely grated

  11. 2 tb Chopped fresh tarragon or 1 ts Dried tarragon

  12. 2 tb Olive oil

  13. Salt and pepper; to taste

  14. The author describes this as "a piquant, almost spicy

  15. dressing that is equally good used hot over greens or at room temperature over mixed lettuces."

  16. In a skillet, heat oil. Add garlic and scallion;

  17. saute until softened. Add broth and boil until the

  18. liquid is reduced by half - about 3 or 4 minutes.

  19. Stir in vinegar; cook an additional 2 minutes.

  20. Transfer to a bowl. Add ginger and tarragon.
