  1. 1 recipe cheese souffle made with

  2. 4 tablespoons grated Parmesan cheese

  3. 1/2 cup cooked, flaked salmon

  4. 1 1/2 teaspoons tomato paste

  5. 1 teaspoon minced dill

  6. 10 ounces cooked broccoli, pureed

  7. 1/4 teaspoon nutmeg

  8. 2 tablespoons grated Parmesan cheese

  1. Preheat oven to 375° F. Prepare a 1-quart souffle dish. Before folding the egg whites into the souffle base, divide the base into two parts. Combine the salmon, tomato paste, and dill with one part and the broccoli and nutmeg with the remaining base. Fold half of the beaten egg whites into each mixture. Place the broccoli mixture in the bottom of the prepared souffle dish. Top with the salmon mixture. Sprinkle the two tablespoons of grated Parmesan over the top of the souffle. Bake for 35 to 40 minutes. Serve immediately.
