  1. 2 tablespoons olive oil

  2. 3 chipotle peppers in adobe sauce

  3. 2 tablespoons brown sugar

  4. 3/4 cup tomato paste

  5. 2 tablespoons Dijon mustard

  6. 2 shallots

  7. 1 1/4 cups clam juice

  8. 1/2 cup white wine

  9. 1/4 teaspoon ground cumin

  10. 1/4 teaspoon salt

  11. 1 tablespoon chopped cilantro leaves

  1. First place chopped shallot and olive oil in a saucepot. Saute the shallot until tender. Add all other ingredients and cook for 20 minutes.
