  1. 4 granny smith apples -- or stayman winesap -- apples -- cored and quartered -- (to-5)

  2. 1 1/3 cups unsweetened apple cider

  3. 1/2 cup water

  4. 1/4 cup sugar

  5. 1/4 teaspoon grated cinnamon

  6. 1/8 teaspoon grated nutmeg one lemon -- juice of

  1. Preparation : Combine the apples with 1/4 C of the cider in a noncorrosive saucepan. Bring to a boil and simmer for five minutes. Stir in water and sugar until sugar dissolves. Add cinnamon and nutmeg. Stir to blend. Remove from heat and cool. Put through a food mill or puree and strain. Stir in remaining cider and lemon juice. Freeze in ice cream freezer according to freezer instructions.
