  1. 4 cups all purpose flour

  2. 1/2 tsp. salt

  3. 2/3 cup solid vegetable shortening

  4. 1 cup sugar

  5. 3 large eggs

  6. 1 tsp. vanilla extract

  1. Stir together flour and salt in a medium bowl. Cream together shortening and sugar in a large bowl. Add eggs one at a time. Beat in vanilla. Gradually beat in flour mixture. Form dough into a ball, then flatten to a disc. Wrap dough tightly and refrigerate 2 hours.

  2. Preheat oven to 350 degrees. Lightly grease 2 large sheet pans. Roll out dough to 1/4 inch thick on a floured surface. Cut out cookies with a heart-shaped cookie cutter. Place cookies 1 inch apart on prepared pans. Bake cookies 10 to 12 minutes until light golden. Transfer cookies to racks and cool completely. Frost cookies with white or pink icing if desired.
