  1. 1 pound crabmeat

  2. 2 hard-cooked eggs -- finely chopped

  3. 1/4 teaspoon white pepper

  4. 1/4 teaspoon cayenne pepper

  5. 1/8 teaspoon garlic powder

  6. 1/8 teaspoon onion powder

  7. Cream of Wine Sauce 3/4 cup bread crumbs

  8. 2 eggs -- beaten

  9. 2 tablespoons flour

  10. 1/4 cup hot milk

  11. 1/4 stick butter

  12. 0. Add flour until smooth. Add milk slowly to form cream. Add

  13. 1/2 seasoning mix, hard-cooked eggs, and crabmeat; blend together well. Allow to cool. Form into croquettes. In a separate bowl, add remaining seasoning mix and eggs; blend well. Dip croquettes into beaten eggs, then into bread crumbs. Fry until golden brown. Pour over with Cream of Wine Sauce.
