  1. Fried Potatoes 6 Large baking potatoes

  2. 2 cups all purpose flour

  3. 1/2 teaspoon cayenne

  4. 2 teaspoons thyme

  5. salt and pepper

  6. about 1/2 cup milk

  7. vegetable oil for frying

  8. 425 for about 1 hour and 15 minutes. Let cool.

  9. Cut each potato into 6 wedges. Stir together the flour, cayenne,

  10. thyme, salt and pepper to taste. Dip each potato wedge into the

  11. milk and then dredge thoroughly in the seasoned flour mixture. Heat

  12. 375. Deep fry wedges, without overcrowding for about minutes until crisp and golden. Drain on paper towels and serve.
