  7. 1/4 c Rice; Quick Cooking

  8. 8 c Chicken Broth

  9. 4 c Water

  10. 1/4 c Tomato Sauce

  11. 2 ea Roasted Chiles; Whole, Chop

  12. 1 ea Tomato; Fresh, Chopped

  13. 1 ea Carrot; Julienned

  14. 2 ea Green Onions;

  15. 1/4 ts Leaf Oregano; Dried

  16. 1/3 c Corn Kernels; Frozen

  17. 2 tb Cilantro; Fresh, ChoppedCut the green onions into 2-inch lengths and use both the green and white parts.

  18. In a small bowl combine the turkey, chopped onion, and egg white. Take

  19. 1 Tbls of the mixture and form into 1-inch balls. Set aside. In a

  20. 4-quart pot, combine the broth, water, tomato sauce, chiles, tomato,

  21. carrot, green onions, oregano, and corn. Bring the mixture to a boil.

  22. Add the meatballs, reduce the heat and simmer about 30 minutes. Add the

  23. cilantro and cook another 5 minutes.
