  1. Bring a pot of water to the boil. One by one, lower the eggs into the water on a soupspoon, and then turn the heat to a gentle simmer. Cook 3 minutes for a very soft egg; 4 minutes for a runny yolk and barely-set white; 5 minutes for a runny yolk and well-set white and 12 minutes for hard-boiled eggs. Makes 2 to 4 servings.
