  1. 1 Wild boar tenderloin

  2. 1 to 1 1/2 lbs., cut into 1/2 inch slices 1 teaspoon garlic, minced

  3. 2 tablespoons oil

  4. 6 green chili peppers, sliced

  5. 1 Thai chili, minced

  6. 1 tablespoons green peppercorns

  7. 24 Shiitake mushrooms, stems removed

  8. 2 teaspoons Thai red curry paste

  9. 4 tablespoons fish sauce

  10. 4 tablespoons oyster sauce

  11. 4 tablespoons mushroom sauce

  12. 2 teaspoons sugar

  13. 1 cup chicken stock

  14. 1 cup Thai basil leaves, chopped

  1. Add oil to a hot large skillet.

  2. Quickly brown the boar slices in small batches without crowding the pan.

  3. Remove all the boar and place garlic, green chili pepper, and green peppercorns, curry paste and mushrooms into the pan. Saute for a couple of minutes until the mushrooms are a little wilted.

  4. Add back in the Wild Boar and the rest of the ingredients.
