  1. Red Potato Salad

  2. Serves 8 12 cups cubed red potatoes

  3. 1 cup chopped green bell pepper (about 1 medium)

  4. 1/2 cup minced red onion

  5. 1/2 cup extra-virgin olive oil

  6. 1/3 cup red wine vinegar

  7. 2 tablespoons Dijon mustard

  8. 2 tablespoons mayonnaise

  9. 1 1/2 teaspoons salt

  10. 1/2 teaspoon ground black pepper

  11. Cook potatoes, covered in boiling water, 10 minutes, or until tender;

  12. drain well and cool. In a large bowl, combine potatoes, bell pepper

  13. and onion. In a small bowl, whisk together remaining ingredients.

  14. Pour over potato mixture, tossing gently to coat. Cover and refrigerate.
