  1. 1 1/2 lbs tofu , mashed

  2. 1/3 cup ketchup

  3. 1/3 cup soy sauce

  4. 2 tablespoons Dijon mustard

  5. 1/2 cup parsley , chopped

  6. 1/4 teaspoon black pepper

  7. 1 medium onion , chopped fine

  8. 1/4 teaspoon garlic powder

  9. 1 cup whole wheat bread crumbs or 1 cup rolled oats or 1 cup corn flakes, crushed

  1. Preheat oven to 350 degrees.

  2. Mix all ingredients together.

  3. Put 1/4 cup oil in a loaf pan, then press the mixture into the pan.

  4. Bake for about 1 hour.

  5. Let cool 10-15 minutes before trying to remove from pan.

  6. Garnish with ketchup and parsley. Also good sliced and fried for sandwiches the next day.
