  1. 1 envelope sugar free cherry or strawberry Jello

  2. 1/2 cup mayonnaise

  3. 1/2 cup sour cream

  4. 1 tsp berry flavor extract

  5. 2 cups cottage cheese (not low-fat)

  6. 1/2 cup strawberries - diced

  7. 1/4 cup Splenda

  8. 4 drops red food coloring

  1. : 1 Prepare Jello according to package directions, but omitting cold water. Add mayonnaise, sour cream, and extract to Jello. Beat with hand-held mixer for 30 seconds.

  2. Add Splenda and beat an additional 30 seconds. (If you're using extra food color, add it now and stir it in slowly with a spoon.) Fold in cottage cheese and berries. Pour into a wet 1-quart mold. Refrigerate for at least 2 hours before serving. Carbs: 4 carbs per serving.
