  1. Nuoc Cham (Vietnamese Hot Sauce)

  2. 1 garlic clove minced

  3. 1/4 teaspoon pepper flakes red, crushed

  4. 2 tablespoons fish sauce

  5. 2 teaspoons sugar

  6. 1 teaspoon lime peel minced

  7. 2 teaspoons lime juice

  8. 3 tablespoons water

  9. Increase the amount of red pepper flakes to suit taste. Combine

  10. garlic, lime peel, and red pepper flakes then add lime juice, fish

  11. sauce, water, and sugar. Whisk until all ingredients are blended

  12. and sugar is dissolved. Makes about 1/3 cup. Will keep short periods

  13. if refrigerated.

  14. Serve: Used on vegetables, meats and fish by the Vietnamese.
