  1. 1 egg

  2. 250g pumpkin puree

  3. 65g caster sugar

  4. 1 teaspoon pumpkin pie spice

  5. 2 eggs

  6. 225g golden syrup

  7. 100g caster sugar

  8. 50g melted butter

  9. 1/2 teaspoon vanilla extract

  10. 120g pecan halves

  11. 1 (23cm) shortcrust pastry case

  1. Stir together one egg, pumpkin puree, 65g sugar and pumpkin spice. Spread over the bottom of the pastry case.

  2. Combine 2 eggs, golden syrup, 100g sugar, butter and vanilla extract. Stir in pecans. Spoon over pumpkin mixture.

  3. Bake at 180 C / Gas 4 for 50 minutes until filling is set.
