  1. 900g (2 lb) caster sugar

  2. 125g (4 1/2 oz) cornflour

  3. 1 dessertspoon ground cinnamon

  4. 1/4 teaspoon ground nutmeg

  5. 1 dessertspoon salt

  6. 2 1/4L (4 pints) water

  7. 3 tablespoons lemon juice

  8. 3kg (6 lb) apples

  1. In a large pot, mix sugar, cornflour, cinnamon and nutmeg. Add salt and water and mix well. Bring to a boil and cook until thick and bubbly. Remove from heat and add lemon juice.

  2. Sterilise preserving jars and lids by boiling them in a large pot of water.

  3. Peel, core and slice apples. Pack the sliced apples into hot jars, leaving a 1 to 2cm space at the top.

  4. Fill jars with hot syrup, and gently remove air bubbles with a knife.

  5. Place lids on jars and process in a water bath for 20 minutes.
