  1. 1 pint(s) strawberries , washed and chopped

  2. 1/8 cup(s) mint , chopped

  3. 1/4 cup(s) honey

  4. 1 cup(s) ricotta cheese

  5. 1/4 cup(s) strawberry jam

  6. 1 whole(s) lemon

  7. 1 loaf(s) French bread , sliced

  8. 3 tablespoon(s) butter , melted

  1. Preheat the oven to 375. Place the sliced bread on a baking sheet, and brush each piece with the melted butter. Toast in the oven for 8-10 minutes, until lightly browned. Set aside to cool.

  2. Toss the strawberries with the mint, honey, and balsamic vinegar. In another bowl, combine the ricotta and jam. Zest the lemon, and add the zest to the ricotta mixture. Chill both mixtures until ready to serve.

  3. When ready to serve,simply assemble the bruschetta by topping each piece of bread with a spoonful of the ricotta mixture, and then with a spoonful of the strawberry mixture.
