  1. 1 teaspoon vegetable oil

  2. 2 medium onions, finely chopped

  3. 1 jalapeno, seeded and minced

  4. 2 pounds lean ground pork

  5. 1/2 cup finely chopped parsley

  6. 1/2 cup bread crumbs

  7. 1/4 cup minced dry-packed sun-dried tomatoes

  8. 1 tablespoon chili powder

  9. 1 1/2 teaspoon salt

  10. 1 teaspoon ground cumin

  11. 1 teaspoon dried thyme

  12. 1/2 teaspoon cayenne pepper

  13. 1/2 cup milk

  1. Preheat oven to 350 degrees F. In a large nonstick skillet, heat oil over medium-high heat, cook onions and jalapeno until soft, about 10 minutes; cool slightly and transfer to a large bowl.

  2. Add pork, parsley, bread crumbs, sun-dried tomatoes, chili powder, salt, cumin, thyme and cayenne; pour in milk, mix thoroughly. Place mixture in a 9 x 4 1/2 x 2 1/2-inch loaf pan, bake for about 1 1/2 hours, until a meat thermometer inserted in the center reads 160 degrees F. Remove from oven and allow to rest 10 minutes before removing from pan.
