  1. ·1 cup of low fat greek style yogurt

  2. 1/2 of an english cucumber, shredded

  3. 1 clove of minced garlic

  4. a big handful of cilantro, chopped up

  5. 1 tablespoon red chili sauce

  6. 4 whole wheat tortillas

  7. 2 cups of part skim shredded mozzarella cheese

  8. 1 cup of feta cheese, crumbled

  9. 1 12 ounce jar of roasted red peppers, chopped up

  10. 20 kalamata olives, quartered

  11. 1 red onion, thinly sliced

  12. Tzatziki

  13. 1. Combine garlic, cilantro, cucmber, yogurt, and chili sauce together. 2. Stir everything together and set aside.

  1. Quesadilla 1. Heat pan over medium high heat and coat with cooking spray (you could also use a little oil or butter here, whatever you have on hand will do).

  2. Place tortilla in pan and allow to toast on one side, about a minute or so. Flip tortilla and start building.

  3. Start with a light layer of mozzarella followed by the red onion, peppers, olives, feta, and finally one last layer of mozzarella. *Be sure to layer on only 1/2 of your tortilla and resist temptation to overstuff!*

  4. Fold tortilla over onto itself to form a 1/2 moon.

  5. Give it one last flip to make sure it's all hot and melted.

  6. Plate quesadilla and top with spicy tzatziki.
