  1. 2 Tablespoons butter

  2. 1 cup chopped sweet onions

  3. 1 cup sliced crimini mushrooms

  4. 1/2 cup chopped green bell pepper

  5. 1/2 cup chopped red bell pepper

  6. 1/2 teaspoon kosher salt, or to taste

  7. 1 clove garlic, minced

  8. 1/4 teaspoon hot pepper sauce or to taste

  9. 1 teaspoon chili powder

  10. 2 teaspoons Worcestershire sauce

  11. 1/4 cup ketchup

  12. 1 (15 ounces) can tomato sauce

  13. 2 pounds firm tofu, mashed into crumbles

  1. Place a large heavy skillet over medium heat. Add butter, onions , mushrooms , green peppers, and red pepper. Sprinkle with the salt and saute about 5 minutes, until vegetables soften. Add garlic and cook an additional 1 minute to cook out the rawness.

  2. Stir in hot sauce, chili powder, Worcestershire sauce , ketchup , tomato sauce, and tofu . Stir to combine and simmer for 5 minutes.

  3. Serve Tofu Sloppy Joes in the traditional manner on buns. It also makes a great topping for pasta or rice .

  4. Yield: 8 servings
