  1. 12 md Leeks

  2. 1/8c Olive oil

  3. Salt & freshly ground pepper

  4. -to taste

  1. + Trim leeks, leaving about one inch of green on top.

  2. Split lengthwise and rinse well.

  3. On the bottom of a large roasting pan, drizzle half the oil.

  4. Add leeks, cut-side down.

  5. Season with salt and pepper.

  6. Drizzle with the remaining oil.

  7. Roast in a preheated 375F oven until browned and tender, about 40 minutes.

  8. Garnish with roasted garlic and herbs.
