  1. 1 medium sized onion, chopped

  2. 8 fresh mushrooms (khumbh), sliced

  3. 2 cloves of garlic (lehsun), crushed a pinch of parsley , dried oregano , dried basil

  4. 2 tbsp butter

  5. 8 Flour Tortillas

  6. 2 cups chopped and blnched broccoli

  7. 2 cups grated processed cheese

  1. Saute the onion; mushrooms, garlic and herbs in the butter over medium heat until lightly browned, about 10 min. add salt and pepper and little red chilli powder(optional) Spoon this mixture over 4 tortillas that have been placed on lightly greased cookie sheets. Top each tortilla with broccoli and cheese and a second tortilla. Bake in a 180 c oven until cheese melts, about 10 min. cut each quesadilla into wedges to serve.
