  1. 1 cup 62g / 2 1/5oz Yellow cornmeal

  2. 1 cup 237ml -- cold water

  3. 1 teaspoon 5ml Salt

  4. 4 cups 948ml -- boiling water

  5. 2 tablespoons 30ml Butter

  6. 1/2 cup 99g / 3 1/2oz Butter - melted

  7. 1/2 cup 73g / 2.6oz Parmesan cheese - grated

  1. Combine cornmeal, cold water, and salt. Stir into the boiling water. Stir constantly over low heat for about 15 minutes. Add 2 tablespoons butter and stir. Sprinkle each individual serving with some of the melted butter and some of the grated cheese. Serve hot.

  2. SAUTEED POLENTA: Put any leftover polenta in a shallow pan and refrigerate. Cut into 1/2-inch slices and slowly sauteethe slices in a mixture of half olive oil and half butter. Serve with grated Parmesan cheese or with Marinara Sauce.
