  1. Pumpkin Cookies

  2. vegetable cooking spray

  3. 3/4 cup canned pumpkin puree

  4. 3/4 cup light brown sugar, packed

  5. 1/2 cup plain low-fat yogurt

  6. 2 tablespoons vegetable oil

  7. 1 teaspoon vanilla extract

  8. 2 cups cake flour, sifted

  9. 1/2 teaspoon ground cinnamon

  10. 1/2 teaspoon salt

  11. 1/2 teaspoon baking soda

  12. 1/2 teaspoon ground ginger

  13. 1/4 teaspoon ground allspice

  14. 1 cup golden raisins

  15. Heat the oven to 350 F. Spray two baking sheets with vegetable

  16. cooking spray. In a large bowl, have kids whisk together the pumpkin

  17. puree, sugar, yogurt, oil and vanilla extract until smooth. In a

  18. medium bowl combine the flour, cinnamon, ginger, allspice, baking

  19. soda and salt. Have kids stir the dry ingredients into the wet and mix until just blended. Fold in the raisins. Drop the batter by

  20. tablespoonfuls onto the baking sheets, leaving 1 1/2 inches between

  21. cookies. Bake until lightly golden, about 15 minutes. Place the

  22. baking sheets on wire racks to cool. Remove the cookies with a

  23. spatula and cool completely.
