  1. 1 cup whole wheat flour

  2. 1 cup unbleached all-purpose flour

  3. 1/4 cup sugar

  4. 1 tablespoon baking powder

  5. 2 teaspoons orange -- rind grated

  6. 1 cup orange juice

  7. 2 tablespoons vegetable oil

  8. 1 egg

  9. 1 cup cranberries -- fresh/frozen chopped

  10. 1/3 cup raisins

  11. 1/3 cup walnuts -- chopped

  1. Preparation : Combine the flours, sugar, baking powder, and orange rind in a mixing bowl. Add the remaining ingredients and stir to blend well. Pour into an oiled 9 x 5 inch loaf pan. Bake at 350 F for 45 to 50 minutes. Cool for 6 minutes before removing from the pan. Cool thoroughly on a wire rack. Store in a plastic bag or aluminum foil for at least one day before slicing.
