  1. 1 1/4 pound ground beef

  2. 1 small onion, chopped

  3. 1/2 cup chopped green pepper

  4. 3 cans,

  5. 6 ounce size, tomato paste

  6. 1 1/4 cup water

  7. 1 cup salsa

  8. 2 cups fresh or frozen corn

  9. 1 1/2 cup chopped fresh tomatoes

  10. 3/4 cup chopped ripe olives

  11. 1 envelope taco seasoning

  12. 3 teaspoons garlic powder

  13. 1 1/2 teaspoon dried parsley flakes

  14. 1/2 teaspoon dried oregano

  15. 1/8 teaspoon salt

  16. 1/4 teaspoon pepper

  17. 32 corn or flour tortillas,

  18. 6 inch size

  19. 8 cups shredded mozzarella cheese

  1. : In a skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink. Drain. In a bowl, combine tomato paste and water until blended. Add salsa. Stir into meat corn, tomatoes, olives and seasonings. Place tortillas on ungreased baking sheets. Spread each with 1/4 cup meat mixture to within 1/2 inch of edge and sprinkle with 1/4 cup of cheese. Bake at 375 F for 5 to 7 minutes or until melted.
