  1. 1 lb 454g / 16oz Medium shrimp - peeled, deveined

  2. 1 cup 237ml Shredded mozzarella

  3. 12 Caramelized Garlic - (see recipe)

  4. 2 tablespoons 30ml Grated Parmesan cheese

  5. 1/4 cup 36g / 1 1/3oz Chopped red bell pepper

  6. 1/4 cup 59ml Olive oil

  7. 6 Basil leaves - chipped

  8. 6 Flour tortillas Grilled Salsa - (see recipe)

  1. Recipe Instructions Thread the shrimp on skewer and grill for 4 to 5 minutes on each side. Remove the shrimp from the grill and, when they cool slightly, cut them into small pieces. In a medium bowl, combine the shrimp with the remaining ingredients, except the tortillas, and mix well. Spread the mixture on the tortillas and grill at a medium heat until cooked through. Serve with Grilled Salsa. This recipe yields 8 to 10 appetizer servings.
