  1. 1 cup 62g / 2 1/5oz Fresh corn or frozen kernels

  2. 2 Eggs - beaten

  3. 1/4 cup 15g / 1/2oz All-purpose flour - plus

  4. 1 tablespoon 15ml All-purpose flour

  5. 2 tablespoons 30ml Coarse yellow cornmeal

  6. 1/2 teaspoon 2 1/2ml Baking powder

  7. 1 teaspoon 5ml Sugar

  8. 1/2 teaspoon 2 1/2ml Salt

  9. 1 Cayenne pepper

  10. 1 Grated nutmeg

  11. Bacon drippings - for frying,

  12. (or shortening)

  1. In a large bowl, combine all the ingredients.

  2. Add enough bacon drippings or shortening to a cast-iron skillet to make 1/4-inch fat. Drop mixture by the tablespoon into hot skillet and cook 1 minute on each side or until golden brown.

  3. This recipe yields 4 to 5 servings.
