  5. 4 oz Apricots; Dried

  6. 2 ts Cornstarch

  7. 3/4 c Apple Juice

  8. 1 x Ginger; Ground, To Taste

  9. 1/2 c Orange Juice

  10. 1 x Cinnamon; Ground, To Taste

  11. 1/4 c Honey

  12. 1 tb Sweet Vermouth

  13. 2 tb Water Cover the apricots with the apple juice and bring to a full boil. Reduce

  14. the heat and simmer, covered, 30 minutes. Stir the apricots occasionally

  15. so they will not stick or burn. Let the apricots cool, then strain.

  16. Reserve the cooking liquid. Chop the cooked apricots and set aside. In a

  17. 2-quart saucepan combine the orange juice, honey, water, cornstarch,

  18. ginger and cinnamon. Heat, stirring constantly, until thickened slightly.

  19. Remove the pan from the heat and add the apricots, their cooking liquid

  20. and vermouth. Serve hot or well chilled.
