  1. Black Bean Salad

  2. 15 ounce can black beans, rinsed and drained

  3. 2 ears worth of corn kernels, blanched in boiling water for 30 seconds

  4. 2 jalapeno peppers, diced, seeded

  5. 2 plum tomatoes, seeded and diced

  6. 1/2 cup diced red onion

  7. 2 cloves garlic, minced

  8. 1/4 cup minced fresh cilantro

  9. Juice of 1 lime

  10. olive or peanut oil to taste

  11. 2 tsp. southwest seasoning mix

  12. several dashes of Jalapeno sauce

  13. salt

  14. pepper

  15. to taste Mix together the first seven ingredients. Whisk together the second

  16. four ingredients and toss with bean mixture. Chill. Salt and pepper to taste. Makes 4 good sized salad servings

  17. Mix this half and half with rice and you've got a great vegetarian

  18. meal.
