  1. Beet Relish

  2. Yield: Six servings.

  3. 5 medium beets (2 pounds), scrubbed

  4. 1 small shallot, chopped

  5. 4 tablespoons chopped capers

  6. 4 tablespoons chopped comichons

  7. 1 tablespoon mayonnaise

  8. 3 tablespoons chopped parsley

  9. 1 1/2 teaspoons salt

  10. 1/4 teaspoon hot sauce

  11. 1/2 teaspoon Worcestershire sauce

  12. Toast points Heat the oven to 400 degrees. Wrap the beets in aluminum foil.

  13. Roast for 1 hour, or until the beets are soft.

  14. Peel and quarter the beets and process in a food processor until

  15. they are smaller than small dice. Combine them with the remaining

  16. ingredients. Serve at room temperature with toast points.
