  1. 1 cup 62g / 2 1/5oz All-purpose flour

  2. 1 teaspoon 5ml Paprika

  3. 2 teaspoons 10ml Salt

  4. 1/2 teaspoon 2 1/2ml Basil or oregano - crushed

  5. 1 teaspoon 5ml Pepper

  6. 1/2 teaspoon 2 1/2ml Powdered thyme

  7. 1/2 cup 73g / 2.6oz Cracker crumbs

  8. 1/2 teaspoon 2 1/2ml Garlic powder

  1. This mixture is sufficient to coat six pounds of chicken.

  2. In a large jar, shake together the flour, salt, pepper, crumbs, paprika, basil, thyme and garlic powder until evenly mixed. Place mixture in a plastic bag. If using only 3 pounds of chicken, place half of the mixture in a tightly sealed jar and reserved for later use. Moisten the chicken pieces with milk or water.

  3. Place chicken pieces, one at a time, in the bag and shake until evenly coated. Bake coated chicken pieces in a greased shallow pan at 350 degrees F for 45 - 60 minutes.
