  2. JAMAICAN RED PEA SOUP

  6. 1 lb Smoked ham hocks -- chopped

  7. -or salted pig's tail

  8. 1 lb Stewing beef -- cubed

  9. 2 c Kidney beans, dried

  10. 4 qt Water

  11. 4 sm Potatoes -- peeled and cubed

  12. 1/2 c Coconut milk -- optional

  13. 1 Onions -- chopped

  14. 2 Green onions -- chopped

  15. 1 Sprig fresh thyme

  16. 1 Hot pepper

  17. Salt

  18. Soak the pig's tail overnight in fresh water to cover. Then thoroughly

  19. rinse the pig's tail (or ham hocks) in cold water. Combine in a large

  20. heavy sauce- pan with the beef, dried kidney beans (if using canned

  21. beans don't add at this time), and the water. Cover and cook over

  22. medium heat for about 1 hour, until the meat and beans are tender.

  23. Add the potatoes, coconut milk, and any other peeled root vegetables

  24. or dumplings along with the onion, scallions, thyme and hot pepper.

  25. (If using canned beans, add at this time.) Add salt to taste. Stir

  26. the soup and allow to simmer for 1 hour. Remove the whole hot pepper

  27. and thyme sprig before serving. Serve hot. This is even better served
