  1. 2 Carrots

  2. 1/2ts Crushed chili flakes

  3. 1 1/2ts Sugar

  4. 1 tb Soy sauce

  5. 1/3c Rice vinegar

  6. 1/2c Smooth peanut butter

  7. 3/4c Water

  8. Dressing

  9. 2 Oranges in sections

  10. 3/4c Fresh coriander

  11. 1 1/2c Bean sprouts

  12. 2 Heads Boston lettuce

  13. breasts

  14. 2 Cooked boneless chicken

  15. 3 Green onions

  16. 1 ts Sesame oil

  17. 2 Sweet red peppers

  18. 4 Cloves garlic crushed

  1. + Cut carrots and red pepper into very fine strips.

  2. Heat oil in skillet, and saut vegetables for several minutes.

  3. Slice green onions lengthwise into thin strips, as well as chicken breasts.

  4. In food processor, add all ingredients for dressing and process until smooth.

  5. Arrange lettuce leaves on plates (6-8).

  6. Top with carrots and red peppers, bean sprouts, chicken, coriander and onions.

  7. Garnish with orange sections.

  8. Finally, drizzle dressing on top just before serving (or serve on the side.

  9. ) Great for chicken leftovers too !
