  1. 2 tablespoons olive oil

  2. 1 cup diced carrots

  3. 3 cloves garlic, minced

  4. 1 1/2 cups frozen green peas, thawed

  5. 1 cup finely chopped onion

  6. 1/2 cup dried cranberries

  7. 4 cups chicken broth Salt to taste

  8. Pepper to taste

  9. 3/4 cup dry couscous

  1. Heat oil over medium-high heat in a large saucepan. Add carrots and garlic and saute until softened, about 5 to 6 minutes.

  2. Add peas, onions and cranberries and saute 2 minutes.

  3. Pour in broth, season with salt and pepper to taste, and bring to a boil. Remove from heat and stir in couscous. Cover pan and let stand for 10 minutes.

  4. Fluff mixture with a spoon and serve hot.
