  1. 3/4 cup 177ml Extra virgin olive oil

  2. 2 tablespoons 30ml Red wine vinegar

  3. 1 1/2 teaspoons 7 1/2ml Salt

  4. 1 1/2 teaspoons 7 1/2ml Freshly-ground black pepper

  5. 2 cups 320g / 11oz Canned garbanzo beans - drained

  6. 5 Pickling cucumbers or Kirbies - peeled and diced

  7. 1 Red onion - diced (medium)

  8. 2 Tomatoes - peel, seed, dice

  9. 1 Fresh basil - chopped

  1. Combine olive oil, vinegar, salt, and pepper in a large bowl and whisk. Add remaining ingredients, toss and chill.

  2. This recipe yields 6 to 8 servings.
