  1. 150g (5 oz) green lentils

  2. 75g (3 oz) brown rice

  3. 50g (2 oz) wheatgerm

  4. 175g (6 oz) dried breadcrumbs

  5. 2 eggs

  6. 1 large onion, chopped

  7. 1 teaspoon dried thyme

  8. 100g (4 oz) passata

  9. 1 dessertspoon hot sauce, such as Tabasco

  10. 2 tablespoons tomato ketchup

  11. 1 tablespoon soy sauce

  12. grated mozzarella cheese

  1. Preheat oven to 160 C / Gas mark 3. Cook lentils and brown rice according to packet directions.

  2. In a large bowl, mash lentils. To the lentils add wheatgerm, breadcrumbs, brown rice, eggs, onion, thyme, passata, ketchup, soy sauce and cheese. Pour into 23x12cm (9x5 in) loaf tin.

  3. Bake, covered, for 1 hour.
