  1. 1 cup self-raising

  2. 2 tablespoons 1 teaspoon bicarbonate of teaspoon

  3. 2 cups wholemeal cup dried fruit of

  4. 60 g cold cooking margarine, cut into small

  5. 1 1/4 cup buttermilk or soured

  6. 2 tablespoons extra 1 tablespoon

  1. Sift together white flour, sugar, soda and salt into a bowl. Stir in wholemeal flour and dried fruit.

  2. Rub in margarine until mixture is crumbly. Add buttermilk, stirring lightly with fork to make a soft dough.

  3. Turn onto floured surface, knead gently and briefly.

  4. Shape into an 18 cm round loaf, place on a very lightly greased baking tray and lightly sprinkle with flour.

  5. Cut a cross into top of loaf.

  6. Bake at 190C for approximately 40 minutes until browned and firm.

  7. Boil extra sugar with water in a small saucepan until dissolved. Brush over hot loaf and bake a further 5 minutes.

  8. Cool on wire rack.
