  2. Pepperoni, Mozzarella & Broccoli Pasta Salad

  6. 1 lb Rigatoni, or other shaped

  7. Pasta

  8. 2/3 c Vegetable oil

  9. 1/4 c Lemon juice

  10. 2 tb Red wine vinegar

  11. 1 t Salt

  12. 1 t Dried oregano

  13. 1/4 ts Coarsely ground black

  14. Pepper

  15. 3 c Broccoli flowerets --

  16. Steamed 3 min.

  17. 1 Whole pepperoni,

  18. 12 oz.,

  19. Skinned -- cut into 1/4 Pieces

  20. 6 oz Mozzarella cheese -- cut 1/4 pieces 1 md Green pepper -- cut into 1/4 " pieces

  21. 1/2 c Red onion -- chopped

  22. 1/2 c Carrot (about 1 medium) --

  23. Chopped 1/3 c Canned sliced black olives

  24. Cook pasta in plenty of boiling water until al dente,

  25. about 10 min. Drain, rinse in cool water. Whisk oil,

  26. lemon juice, vinegar, salt, oregano and black pepper

  27. together, set aside. In a large bowl combine all

  28. remaining ingredients. Add pasta, combine. Add

  29. dressing, toss to blend. Serve chilled or at room

  30. temperature.
