  1. 4- 6 1 lb/500 g spaghetti

  2. 1 lb/500 g cherry tomatoes, cut in half

  3. 7 oz/200 g Mozzarella cheese, cut into small cubes

  4. 2 tbsp finely chopped basil

  5. 1 tbsp finely chopped mint

  6. 1 clove garlic, finely chopped

  7. 6 tbsp extra-virgin olive oil

  8. salt and freshly ground black pepper to taste

  9. fresh basil leaves, to garnish

  1. Method :

  2. Cook the pasta in a large pot of salted, boiling water until al dente.

  3. Drain and toss with the tomatoes, Mozzarella, basil, mint, garlic, and oil in a large bowl. Season with salt and pepper.

  4. Transfer to serving dishes and garnish with the basil leaves. Serve hot.
