  1. 8 oz 227g Cheese cream - softened

  6. 1 tablespoon 15ml Cornstarch

  7. 1/2 teaspoon 2 1/2ml Vanilla extract

  8. 4 Unsweetened chocolate

  9. 1/2 cup 99g / 3 1/2oz Butter or margarine - softened

  10. 2 cups 396g / 13oz Sugar

  11. 2 Egg

  12. 2 cups 125g / 4.4oz All-purpose flour

  13. 1 teaspoon 5ml Baking powder

  14. 1/2 teaspoon 2 1/2ml Baking soda

  15. 1/4 teaspoon 1 1/3ml Salt

  16. 1 1/2 cups 355ml Milk

  17. Fudge Frosting

  18. 2 Unsweetened chocolate

  19. 1/4 cup 49g / 1.7oz Butter or margarine

  20. 3 1/2 cups 693g / 24oz Sugar - powdered, sifted

  21. 1/3 cup 78ml Milk

  22. 1 teaspoon 5ml Vanilla extract

  1. Cake: Combine cream cheese, 1 egg, and 1/4 cup sugar in a medium mixing bowl; beat at high speed until smooth. Gradually add 3 tbs milk and the next 3 ingredients, beating well. Set aside. Place chocolate squares in top of a dbl boiler; bring water to a boil.

  2. Reduce heat to low; cook until chocolate melts, stirring occasionally.

  3. Remove from heat and let cool. Cream 1/2 cup butter; gradually add 2 cup sugar, beating well at medium speed. Add 2 eggs, one at a time, beating well after each addition.

  4. Combine flour, baking powder, soda, and salt; stir well. Add flour mixture to creamed mixture alternately with 1 1/2 cup milk, beginning and ending with flour mixture.

  5. Mix after each addition. Stir in melted chocolate and 1 tsp vanilla. Spread half of chocolate batter in a greased and floured 13x9x2" baking pan. Spoon reserved cream cheese mixture evenly over chocolate batter; top with remaining half of chocolate batter.

  6. Bake at 350F for 55-60 minutes or until a wooden pick inserted in center comes out clean. Let cool completely in pan on a wire rack. Spread frosting over cake.

  7. Frosting: Combine chocolate and butter in top of a dbl boiler; bring water to a boil. Reduce heat to low; cook until chocolate and butter melt, stirring occasionally.

  8. Remove mixture from heat and let cool. Add powdered sugar and milk to chocolate mixture, beating at medium speed until smooth. Stir in vanilla.
