  1. 2 tablespoons butter

  2. 6 large eggs

  3. 1 cup cooked rice

  4. 1/3 cup milk

  5. 1/2 cup sliced spring (green) onions

  6. 1/2 cup chopped green pepper

  7. 1 tablespoon chopped fresh cilantro

  8. 1 teaspoon soy sauce

  9. 1/2 teaspoon salt

  10. 1/4 teaspoon ground black pepper

  1. Heat butter in frying pan.

  2. Beat eggs until frothy. Add rice, milk, onions, green pepper, cilantro, soy sauce salt and black pepper.

  3. Pour mixture into skillet. Cook, stirring constantly, until eggs are of desired doneness.
