  1. 2 passionfruit

  2. 225g (8oz) green fleshed melon

  3. 25g (1oz) caster sugar

  4. 1 ripe mango, peeled and sliced

  5. 225g (8oz) strawberries, hulled and halved

  1. Place the caster sugar and 100ml (4fl oz) water in a small pan. Heat gently until the sugar dissolves, then boil for 5-10 mins until syrupy. Add the juice and seeds from the passion fruit and leave to cool. Mix the melon, mango and strawberries together. Pour over the syrup and chill for 1 hr before serving.
