  2. YELLOW SPLIT PEA SOUPS

  6. 2 c Dried yellow split peas

  7. 8 c Vegetable stock

  8. 2 md Potatoes

  9. 2 lg Carrots

  10. 3 Celery stalks

  11. 1 lg Onion

  12. 1 Turnip, peeled

  13. 2 Parsnips, peeled

  14. 3 ts Mustard powder

  15. 1 d Allspice

  16. 1 t Cumin

  17. 1 t Marjoram

  18. 1 t Thyme

  19. 2 ts Salt

  20. Freshly ground pepper

  21. Croutons

  22. Rinse split peas, bring to a boil in the stock.

  23. Coarsely chop the vegetables & add to the water as it

  24. comes to a boil. Lower heat & simmer for about 1 1/2

  25. hours. Puree soup in batches until it is quite

  26. smooth. Add spices & herbs & season with salt &

  27. pepper. Reheat gently.
