  1. 2 oz 56g Unsalted butter

  2. 1 Cinnamon stick

  3. 3 Cardamom pods

  4. Fresh ginger

  5. 2 Dried chillies

  6. 1 Onion (large)

  7. 1 Garlic

  8. 8 oz 227g Lentils

  9. 1 teaspoon 5ml Ground turmeric

  10. 1 tablespoon 15ml Ground cumin

  11. 1 teaspoon 5ml Salt

  12. 3/4 Water

  13. 3 Fresh green chillies

  14. 1 Chopped tomatoes

  15. Fresh coriander

  1. Melt the butter in a pan over a low heat, then add the cardamom pods (split, cooking them for just a few seconds. Add the fresh ginger and crushed dry chillies, cooking for another half minute. Turn the heat up to high and add the thinly sliced onion and garlic, cooking until they start to brown. Add lentils (which have been soaked and drained) then the turmeric, cumin powder, salt and stir in the water. Cook for 5-6 minutes to let the water dry out.

  2. Add chopped tomatoes and the fresh chillies, leaving the stalks intact.

  3. Finally add the fresh coriander to taste. Serve hot.
